Ingredients:
-1 cup almond flour
-1/4 cup honey
-1 teaspoon vanilla extract
Instructions:
1. Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper and set it aside.
2. In a medium bowl, whisk together the almond flour, honey and vanilla extract until everything is well combined.
3. Scoop out tablespoon sized balls of batter onto the prepared baking sheet, making sure to press them down slightly so they resemble traditional biscotti shape. You should be able to fit 12 on one baking sheet.
4. Bake in the preheated oven for 5 minutes, or until the biscotti are lightly golden brown around the edges. Allow to cool on the baking sheet for a few minutes before removing to a wire cooling rack to cool completely
